Out of all the sweets and treats in the world, I have finally decided that chocolate chip cookies are my favorite! Nothing beats biting into a warm, gooey chocolate chip dinner with a big chilled glass of almond milk! Talk about the ultimate comfort food!
And the best part about this recipe is that you get all the comfort with out the “oh I shouldn’t have” that normally follows. Because oh you should! Perhaps two times!

Chocolate Chip Cookies, The Clean And Delicious Way!

Ingredients
  • 1/4 cup all natural peanut butter (or hazelnut spread)
  • 1/2 cup coconut oil (or grapeseed oil works as well)
  • 1 egg white
  • 3/4 tsp. vanilla
  • 3 T. water
  • 2 cups old fashioned oatmeal Quaker oatmeal (large flakes)
  • 2/3 cup whole wheat flour
  • 1/4 tsp. sea salt
  • 1/2 tsp. baking soda
  • 1 tsp. cinnamon
  • 2 tbsp mini dark chocolate chips
  •
Directions
Preheat the oven to 350-degrees.
Mix all the wet ingredients in first… the first 5 ingredients above.
Then incorporate the rest of the stuff in and mix until just blended (don’t mess up the oats).
Drop Tablespoon mounds on a cookie sheet (Makes ~30 cookies)  and bake for around 11-14 minutes.

Phrase of the Day:  STAND STRONG!!

Week 4 of the Greenville Goal Getters

Monday 5th grade and Jr. High:
Diana started the group out with a warm up and stretch then they broke into 2 groups.

Diana led Station 1:  Jump ropes, planks and pushups.

Charisa led Station 2:  Kickboxing

they switched stations so all kids went to both stations.

Then Diana and Charisa had 2 boxes that they brought out and the kids were divided into 2 groups.  They had to work as a TEAM and their GOAL was to try and get everybody on their team standing up with one foot on the box all together.  The big thing was trusting their teammates to hold them up and not let them go.  It was neat to see the groups talking with each other, coming up with ideas of how to get everyone on the box, and after a while, they all conquered the obstacle.  Good Job Kids!!

Charisa then led the group with a cool-down/stretch

Wednesday 6th grade and the Jr. High:
Danesa, Nicole and Kelly started the group out with a warmup and a stretch.  The group was then divided into 3 stations: 5 mins. at a station

Station 1 was led by Danesa, Mrs. Goehrich, and Mrs. Karns:  Jump Roping outside.  Even though it was windy and it was hard to jump rope, the kids found ways to improvise and make it work.

Station 2 was led Mr. Fiely, Mr. Gehret, and Mr. Mortensen:  Basketball inside.  They were taught a couple of basketball drills and then if time permitted, a quick game of shoot-out.

Station 3 was lead by Mrs. Hawk and Mrs. Tanner:  They took the kids outside with the medicine balls and worked on wall shots, squats with the ball, planks, pushups.

Mr. Gehret then led the cool-down/stretch.

FRIDAY at the YMCA:
The kids were divided into 2 groups, the first group went swimming while the other group was broken down into 4 groups.
Group 1:  went outside with Mr. Allan and worked with Kettle Bells
Group 2: went outside with Mrs. Borgerding and worked on lunges, squats and running the hill.
Group 3: was inside with Miss Ruth and worked the ab station
Group 4: was inside with Jen and worked the rope station.
After all groups had been at the 4 stations, they were then switched with the group that had been swimming and it started all over again.
I think fun was had by all this day.

7 Creative Peanut Butter Breakfast Ideas

You all know how much I love peanut butter and how often I include it in my breakfast. That's why I was excited to hear about the Peanut Butter for Breakfast campaign put on by the National Peanut Board in honor of National Peanut Month. I have always thought that peanut butter is a great breakfast option since it goes with almost anything and has a high nutritional content. Two tablespoons of peanut butter provide eight grams of natural, plant-based protein and are an excellent source of niacin and a good source of Vitamin E, magnesium, and phosphorus. There... ...are many ways to enjoy peanut butter for breakfast, and here are some of my favorites: ban berry toast.jpg
  • Stir a tablespoon of peanut butter into oatmeal for a flavor and protein boost.
  • Nix the protein powder and instead add peanut butter into your smoothie to add protein and other vitamins and minerals.
  • Swap out butter and syrup on your whole grain waffles or pancakes for peanut butter with just a tiny drizzle of honey for a breakfast with healthier fats and less sugar.
  • Top your toast with peanut butter and any type of fresh fruit. Banana slices are always a favorite, but if you've seen my breakfast posts, you know that I often top my peanut butter toast with fresh berries.
  • Spread peanut butter evenly over a whole banana length-wise and then roll in your favorite granola or whole grain cereal. Serve with a nonfat latte or glass of skim milk.
  • Stir a tablespoon of peanut butter into your favorite low-fat yogurt. Then use as a dip for apple slices and graham crackers.
